And then there is of course the nightly request to stop for ice cream on the way home from lacrosse practice!
All of those sweet treat requests inspired this sweet treat post, from the end of Summer last year when I decided to try out the air fryer cookie bowl brownies and shared how to make them HERE in this post
And now?
Now I have been inspired by two of my blogger friends, who have shared Summer sweet treats that caught my eye…because?
They are so easy…even my girls can make them on their own and perhaps they will STOP eating all of the snacks!

2 Easy Summer Sweet Treats You Need To Try
Graham Cracker Cookie Butter Marshmallow Treats
When I first saw this sweet treat shared on Instagram by Janine at the @happyhappynester I knew I wanted to try it.
Mostly because my girls love anything involving a mini marshmallow!
Below are the three ingredients I bought at our local Shoprite Grocery Store.
Ingredients:
- Graham Crackers.
- Cookie Butter
- Mini Marshmallows.
Step One:
Spread the cookie butter over the graham cracker.
Step Two:
Top the graham cracker and cookie butter with mini marshmallows.
Step Three:
Place on foil lined cookie sheet and place in a 300 degree preheated oven.
Step Four:
Bake for just a few minutes until the mini marshmallows start to turn slightly brown or melt.
Enjoy a perfectly sweet crunchy and sweet treat all melted into one!
*BONUS – Livvy made these all by herself using the microwave to warm the treat instead of the oven! 🙂
Strawberry Sugar Cookie Ice Cream Sandwiches
I just love everything that Leslie and everything she shares over at My One Hundred Year Old Home Blog.
You might even remember that I bought her book, “A Home To Share” on Amazon, a few months ago, and shared it as one of the things I Am Loving Right Now in a post a few months ago.
When I saw Leslie’s Strawberry Shortcake Ice Cream Sandwich recipe, HERE on her blog, I knew I wanted to try it.
I LOVE ice cream sandwiches, but I don’t love chocolate, so this sounded like a perfect sweet treat to try!
Even better?
I had a willing assistant to help me, which always makes it more fun! 🙂
However, my willing assistant did make one request.
Eve did not want to use the shortbread cookies that the recipe called for, she requested we use a “soft cookie” for the sandwich.
Below are the three ingredients we used to make our own version of the strawberry ice cream cookie sandwiches.
Ingredients:
- Vanilla Ice cream
- Strawberries.
- Bakery Sugar Cookies
Step One: Make the Strawberry Syrup.
Cut the 2-3 cups of strawberries into quarters.
Step Two:
Place quartered strawberries into sauce pan over low heat.
Side note: I am using our Always Pan to create he strawberry sauce. We LOVE this pan and literally ALWAYS use it for EVERYTHING! Comes in a bunch of pretty colors HERE!
Step Three:
Add 1/4 cup sugar.
Step Four:
Warm the strawberries and sugar over low heat, stirring occasionally until syrupy.
Once the strawberries and sugar have become syrupy, fold the strawberries into a bowl and set aside to cool. (We placed our strawberry syrup in the refrigerator to help the cooling process.)
Step Five:
While the Strawberry Syrup is cooling, you can start to make the first layer of ice cream, by scooping vanilla ice cream into a 9×13 pan and spread it all over the bottom to create the bottom layer of the strawberry swirl ice cream.
Step Six:
Add the strawberry sauce on top of the vanilla ice cream layer using a slotted spoon.
*Make sure the strawberry sauce is completely cooled before adding, because otherwise it will melt your ice cream!
Continue to spread the strawberry sauce all over the bottom layer of ice cream.
Step Seven:
Scoop out more vanilla ice cream and add it on top of the strawberry sauce layer.
Step Eight:
Pop the finished ice cream layered casserole back into the freezer to firm up and set.
(We decided to leave our ice cream casserole in the freezer overnight, but you really just need to give it 30 minutes or so to solidify.)
Step Nine:
Scoop out all three layers of the strawberry swirl ice cream and add it to the cookie of your choice! You already know we chose to use sugar cookies which was an EXCELLENT choice by Eve! 🙂
Step Ten:
Flatted the ice cream with the back of the ice cream scoop onto the bottom cookie and add the top cookie to create a homemade ice cream sandwich!
You are ready to serve your strawberry swirl homemade ice cream sandwiches…
And make hungry athletes happy after practice! 🙂
