Last night we attended a pool party for Eve’s soccer team and I was assigned an appetizer to bring.
While I was at the grocery store picking up the 6 easy ingredients to make this taco dip, it dawned on me that I have probably emailed this quick recipe out at least 50 times to 50 different people over recent years!
It never fails, after I host our holiday party, outdoor movie night, or a kiddo birthday party…the next day, someone always inevitably pings me for this layered taco bean dip recipe!
This easy appetizer is a Krout staple, anytime we host friends and has quickly become a large crowd pleasing appetizer that allows A LOT of people to happily enjoy and is SO easy to make!
And in bonus news?
This easy taco dip is what I would call a “season-less” appetizer snack!
(Is that even a thing?!)

Wait Until You See This Easy Layered Taco Bean Dip
Here’s the story behind how this layered taco bean dip recipe came to be.
It was Winter 2010 and my Aunt Jeanie had flown in for a visit from Kentucky to visit my Mom, (her older sister) and her new niece (our oldest daughter Eve who was not quite 1 year old yet.)
The details are fuzzy around her visit.
Except for one minor detail…
SNOW.
BIG SNOWFLAKES that made for lots and lots of…SNOW.
A snowstorm hit the East Coast and left my Aunt Jeanie stranded here in Maryland for extra days upon days.
And while she was here, we made some of my sweetest and best memories of time spent together.
In fact?
I can still hear both she and my Mom bursting into giggles, as they were settling in for bed in our guest room down the hall. Shawn had just knocked on their door to tell them that he had been reminded by the news reporter on our television to…check on the elderly, and he wanted to make sure they were O.K. 🙂
They thought this was the funniest thing they had ever heard and BURST into giggles and could not stop!
Yes, we made the most of my Aunt’s extended visit, even making makeshift snow boots for my Aunt Jeanie to use, by wrapping plastic bags around her sneakers, as pictured below. 🙂
Memories were made during that 2010 snowstorm.
And so was this Layered Taco Bean Dip by my Aunt.
As the groceries started to dwindle, my Aunt got creative with the cans in our cupboard and this layered taco dip recipe was born.
After the four of us has successfully devoured my Aunt’s appetizer one evening during a snowstorm happy hour…
I asked her to jot down the recipe in my recipe book, so that I could re-create it.
Friend, can I just tell you that having recently lost my amazing Aunt Jeanie to pancreatic cancer this past Fall…how comforting it is, to look back at her beautiful handwriting and be taken back to these memories of her.

How she ended it.

Now, let’s get to that super EASY Layered Taco Dip recipe that everyone is going to LOVE!
Layered Taco Bean Dip
Ingredients:
16 Oz Sour Cream
12 Oz Whipped Cream Cheese
Taco Seasoning Packet
Black Beans
White Shoepeg Corn
Red, Orange & Yellow Peppers
Corn Chips
Combine the whipped cream cheese and sour cream in a mixing bowl.
Add the taco seasoning packet to the combined mixture.
i prefer to use the 25% less sodium packet
Mix the sour cream, whipped cream cheese and taco seasoning together.
Spread the base layer onto a flat serving dish.
Drain and rinse the black beans and can of white corn.
Dice the red, orange and yellow peppers, set aside.
Sprinkle the black beans onto the sour cream & cream cheese base layer.
Sprinkle white shoepeg corn on top of the layer of black beans.
Sprinkle the diced red, orange and yellow peppers to create the top layer.
Serve with corn chip scoops and ENJOY (as my Aunt Jeanie wrote) 🙂
